Utilizing by-products from ginger ale production

Ginger ale specialty store Kohodo Co., Ltd. (Head office: Chiyoda-ku, Tokyo; CEO: Masaaki Shirogaki) and craft sweets brand HiOLI Co., Ltd. (Head office: Setagaya-ku, Tokyo; CEO: Akira Hiraoka) have jointly developed "Ginger Spice Ice Cream" by upcycling ginger scraps generated during the ginger ale manufacturing process, aiming to develop an environmentally friendly product. This ice cream is a sustainable and unique product born from the fusion of Kohodo's cherished ginger flavor and HiO ICE CREAM's craft sweets technology.

Sustainable use of ginger ale manufacturing by-products

At Kohodo, about 15 grams of ginger waste is generated for every liter of ginger ale produced. Traditionally, the waste was dried and reused in ginger tea, but it was not possible to use it all, and some had to be discarded. In order to reduce the environmental impact and provide a sustainable product, Kohodo partnered with HiO ICE CREAM, which has extensive experience in ice cream manufacturing, to create "Ginger Spice Ice Cream" using discarded ginger waste as an ingredient.

Ginger Spice Ice Cream is a special ice cream that makes the most of the flavor of ginger while still offering a refreshing sweetness and fragrant stimulation. The aroma of spices in Kohodo's ginger ale brings out the rich flavor, providing a new experience for ice cream fans and those interested in sustainable products.

Through this joint development, Kohodo and HiO ICE CREAM have discovered the potential for upcycling by utilizing each other's areas of expertise. This case shows the potential for new product development between companies as part of efforts to streamline manufacturing processes and create a sustainable society.
